Eggless Caramel Pudding

Hello, food lovers! Today, we're diving into the world of sweet, creamy desserts with a twist. Get ready to discover the magic of Eggless Caramel Pudding, also known as Caramel Custard or Caramel Bread Pudding. This dessert is perfect for those who love a good pudding but want to avoid eggs. Let's get started!

The Beauty of Eggless Caramel Pudding

First things first, let's talk about why this dessert is so special. Traditionally, caramel pudding is made with eggs, but our version skips them entirely. Don't worry, though – it's still deliciously creamy and satisfying. Plus, it's a great option for vegetarians or those with egg allergies.

Ingredients

Before we jump into making this yummy treat, let's take a closer look at what we'll need:

For the Caramel:

  • 1/4 cup sugar

For the Pudding:

  • 6 bread slices
  • 3 tablespoons custard powder
  • 2 cups milk
  • 1/2 cup sugar

Simple, right? You probably have most of these ingredients in your kitchen already!

The Caramel Magic

Let's start with the caramel. It might sound fancy, but it's actually super easy to make. All you need is sugar and a bit of patience. Here's how:

  1. Put your 1/4 cup of sugar in a small pan.
  2. Heat it over medium heat. Don't stir it!
  3. Watch as the sugar starts to melt and turn golden brown.
  4. Once it's a nice amber color, quickly pour it into your pudding mold.
  5. Swirl the mold to coat the bottom evenly.

Be careful here – melted sugar is very hot! But don't worry if it hardens quickly; that's exactly what we want.

Bread: The Unexpected Star

Now, you might be wondering, "Bread in a pudding?" Trust me, it works! The bread soaks up all the yummy flavors and gives the pudding a lovely texture. Here's what to do:

  1. Take your 6 slices of bread and remove the crusts.
  2. Cut them into small cubes.
  3. Set these aside for now – we'll use them soon!

Custard: The Creamy Heart

The custard is what makes this pudding so creamy and delicious. And the best part? No eggs needed! Here's how we make it:

  1. In a bowl, mix 3 tablespoons of custard powder with a little bit of cold milk. Just enough to make a smooth paste.
  2. Heat the rest of the 2 cups of milk in a pan.
  3. Add 1/2 cup of sugar to the milk and stir until it dissolves.
  4. Once the milk is hot (but not boiling), add your custard paste.
  5. Keep stirring! The mixture will start to thicken.
  6. Cook until it's nice and thick, then remove from heat.

Putting It All Together

Now comes the fun part – assembling our pudding:

  1. Take your caramel-coated mold.
  2. Add a layer of bread cubes.
  3. Pour some of the custard over the bread.
  4. Add another layer of bread cubes.
  5. Pour the rest of the custard on top.
  6. Gently press down to make sure all the bread is soaked in custard.

Cooking Time

We're almost there! Here's how to cook your pudding:

  1. Preheat your oven to 350°F (175°C).
  2. Place your pudding mold in a larger baking dish.
  3. Fill the baking dish with hot water, about halfway up the sides of your pudding mold.
  4. Carefully place this in the oven.
  5. Bake for about 30-40 minutes, or until the pudding is set but still a bit jiggly in the center.

The Waiting Game

I know it's hard, but once your pudding is out of the oven, you need to let it cool. Put it in the fridge for at least a couple of hours, or even overnight if you can wait that long. This cooling time helps the pudding set and makes it easier to unmold.

The Big Reveal

When you're ready to serve Eggless Caramel Pudding:

  1. Run a knife around the edge of the mold.
  2. Place a plate on top of the mold and quickly flip it over.
  3. Gently lift the mold – your pudding should come out easily.
  4. Marvel at the beautiful caramel sauce that's now on top!

Eggless Caramel pudding is great on its own, but here are some ideas to make it even more special:

  • Add a dollop of whipped cream
  • Sprinkle some cinnamon on top

Description

Today we are going to make a super simple and mouth watering Caramel Bread Pudding. It's very easy, quick, eggless and doesn't even require an oven. And the best thing is, it takes only 4 simple ingredients to make - Bread Slices, Custard Powder, Milk and Sugar. Let's get started with this quick recipe that only takes 5 minutes to prepare.

Ingredient List
    For Caramel
  • 1/4 cup Sugar
  • For Pudding
  • 6 Bread Slices
  • 3 tbsp Custard Powder
  • 2 cup Milk
  • 1/2 cup sugar
Instructions
    1st step
  1. make caramel

Caramelizing sugar is a very simple but tricky process.

There is a possibility of sugar burning.

So check the stages of caramelization very well.

In a hot pan over medium heat, add the sugar and let it melt.

    No need to shake it.

Do not use a spoon or spatula.

Just swirl the pan so that it melts evenly, until it is a deep golden color.

Pour the caramel into a glass bowl or baking tin (in which you will make the pudding) and spread it evenly quickly, as it will harden as it cools.

  2. Pudding Making

To make pudding you need 6 breads, 3 tbsp custard powder, 1/2 cup sugar and 2 cups milk.

Bread and custard will help thicken the milk.

To make pudding, blend milk, custard powder, sugar and bread (cut into pieces) well in a blender jar.

Now pour the mixture in a high pan and boil it well.

Keep stirring when it thickens a bit.

So that no lumps are formed.

Whisk the mixture until it becomes very thick.

Now pour the thick mixture into the mold.

Remember that the caramel will be on the bottom and the mixture on top.

Tap it slightly, so that the mixture sets well.

Take a kadhai and place a stand at the base.

    Then pour water.

Cover the pot with aluminum foil and place it on the stand.

Turn on the gas and close the lid of the pan. Cook on low heat for 30 minutes.

Take out the bowl and remove the foil.

Cool and refrigerate for 2 hours.

When the pudding has cooled, gently press the sides down from the bowl.

Place the plate on the bakeware and invert it.

Tap lightly and carefully lift the mold.

Our Eggless Caramel Bread Pudding is ready to serve.

Note

Tips for the Perfect Caramel Pudding

  • Use a heavy-bottomed pan for caramelizing sugar to prevent burning.
  • Experiment with the caramel thickness for varying levels of sweetness and bitterness.
  • Ensure your egg substitute works well for custard-like textures.
