For Second Marination

  • 2 tbsp Mustard oil
  • 1 cup Hung curd
  • Salt to taste
  • 1 tsp Prepared Masala
  • 2 ½ tsp Degi red chilli powder
  • ½ Lemon juice
  • ¼ tsp Dry fenugreek leaves, crushed
  • 1 tbsp fresh Coriander steam, chopped
  • ½ tbsp roasted Gram flour

For Vegetables

  • 1 medium size Onion, cut into cubes
  • 1 medium size Green bell pepper, cut into cube
  • 1 medium size Red bell pepper, cut into cube
  • 1 medium size Yellow bell pepper, cut into cube
  • 1 medium size Tomato, cut into cube
  • ½ tbsp Mustard oil
  • Salt to taste
  • 1 heaped tsp Degi red chilli powder
  • A pinch of asafoetida
  • 1 tsp Ginger Garlic paste

For Masala

2 Black cardamom

  • 6-7 Green cardamom
  • ½ tbsp Black peppercorns
  • ¼ tsp Fennel seeds
  • 1 tsp Coriander seeds
  • few Fenugreek seeds
  • few Mustard seeds
  • 2 Cloves
  • Salt to taste

For Mint Chutney

  • 2 heaped tbsp Mayonnaise
  • ½ inch Ginger, slice
  • ½ cup Mint leaves
  • ¼ cup Coriander leaves
  • 1 Green chilli
  • 1 tsp Mustard oil
  • Salt to taste
  • 2 tbsp Curd, beaten
  • ½ tsp Prepared Masala

Other Ingredients

  • 1 tsp Oil
  • Ghee for bursting
  • Coal for cooking

For Masala onion

  • 1 medium size Onion, rings
  • Salt to taste
  • Mustard oil
  • A pinch of degi red chilli powder

For Assembling

  • Cabbage leaves
  • Butter rice
  • Prepared Masala
  • Prepared Mint Chutney
  • Masala onion
  • Brandy for flambe

For Garnish

  • Coriander
  • sprig Lemon,
  • wedge Green chilli

For chicken tikka sizzler we need to marinate first. Marination will be of 2 types, along with tikka masala, vegetables and Brandy and Coal for flambe. A bit long route but worth it.

  • 1/2 tsp Ginger- Garlic paste
  • 1 1/2 tbsp Lemon juice
  • salt (to taste)
  • 1 tbsp Mustard oil
  • 1 egg white
  • Masala preparation
  • 1 tsp Coriander seeds
  • 2 Black cardamom
  • 6-7 cardamom
  • 2 clove Cloves
  • 1/2 tbsp Black Paper
  • 1/4 tsp Fennel seeds ((Saunf))
  • 1/4 tsp Fenugreek seeds ((Methi))
  • 1/4 tsp Mustard seeds
  • salt (to taste)
  • For 2nd Marination
  • 1 cup Hung curd
  • 2 tbsp Mustard oil
  • 2 tsp Red chili powder (Kashmiri/Degi)
  • 1 1/2 tbsp Lemon juice

Instructions
    Process
  1. 1st Marination

    For the first marination add chicken pieces, egg white, salt, ginger garlic paste, lemon juice and mustard oil in a bowl.


    Mix well and leave for 5 mins.

  2. Masala

    To make the masala, roast all the spices in a pan.
    When cool, grind it.
    Our spices are ready.

  3. 2nd Marination

    Now for the second marination in a container, all the ingredients should be mixed well together in the right amount.

    Leave it for 2 mins so that all the spices mix together.


    Now mix the mixture well with the 1st marinated chicken pieces.

     

  4. Chicken Grilled

    Take skewers and put marinated chicken with vegetables in it.
    Keep them in sequence.

    Heat a grill pan. Add oil and skewer chicken. Grill well from all sides until golden brown.


    You can also place skewers on hot coals and cook on all sides.

    Brush with ghee and cook until well done.

    Sprinkle some prepared masala and keep aside.

  5. Green Chutney

    For green chutney mix all the paste well in a bowl.

    add curd, prepared masala and mix well. Keep aside for further use.

  6. Chicken Tikka Sizzler

    Take a super hot sizzler plate and put some cabbage leaves, butter rice.
    Sprinkle some previously prepared masala, pour green chutney over it.
    Place the masala onion (mix onion rings, salt to taste, mustard oil, a pinch of kashmiri/doghi red chilli powder together).
    Now add the chicken tikka.
    Deglaze with brandy.
    Garnish with coriander leaves, lemon peel and green chilies. Chicken tikka sizzle is ready and served hot.
